Origin:
60% Ceres Plateau, 40% Stellenbosch (Polkadraai)
Vineyard:
Ceres Plateau: Arguably one of the most unique vineyards in South Africa. Grown on a steep, well drained, shale slope at an extreme altitude above 1000m. Vineyard often covered by snow in the winter months.
Stellenbosch: From a single vineyard planted on granitic soils of a south facing slope in the Polkadraai Hills. Planted from east to west to allow optimal sun and wind exposure.
Vinification:
Hand picked, cooled overnight and sorted by hand. 100% whole bunches crushed by foot, before spontaneous fermentation in open top fermenters. Extended maceration until optimal extraction of flavour and tannin has been achieved. Pressed into older French oak barrels for 12 months maturation before being blended and prepared for bottling without any fining and only a light filtration.
Tasting Notes:
A perfect marriage between the high-altitude Syrah of Ceres Plateau, known for its delicate fruit and spice expression and the more opulent Polkadraai Syrah, known for its intense white pepper character. Maraschino cherries, red berry fruits with nuanced spice and white pepper notes. Layers of intensity packaged on a succulent palate with grippy tannins and a delicate but firm structure. Drinking well young and will age beautifully.
