Vineyard:
Selected from three high density planted single vineyards grown on ferricrete and shale soils in one of the coolest wine-growing areas of South Africa. Viticultural practices focussed on producing lower yields of concentrated fruit that express the individuality of each white grape variety.
Vinification:
Hand picked and sorted before spontaneous fermentation with minimal intervention allowing the wines to express their inherent characteristics and balance. Matured for 10 months in neutral vessels before being assembled and left to settle for a further 3 months. Bottled un-fined with only a light filtration.
Tasting Notes:
Cool climate Chenin Blanc, with its delicately perfumed fruit expression forms the backbone. Sancerre-styled Sauvignon Blanc adds flinty minerality and structure. A small component of Riesling ties the blend together contributing its typical varietal opulence, waxy mouthfeel and bracing acidity. Yellow fruit, citrus, beeswax, ginger and fennel spice with a hint of resinous floral notes are seamlessly interwoven. Delivered on a multi-layered, concentrated palate with a well measured acidity and saline finish that lingers on the palate. Will gain additional complexity over the next 10 years.
