Vineyard:
Three Pinot Noir single vineyards sites were selected for the final blend. Grown in high density planted vineyards on a combination of ferricrete and shale soils in one of the coolest wine-growing regions in South Africa. Viticultural practices focussed on producing lower yields of high quality Pinot Noir that expresses the elegance and complexity of the variety.

Vinification:
Hand-picked, cooled overnight and sorted by hand before being crushed with 20% left as whole bunches. Cold soaked for 8 days followed by spontaneous fermentation and an additional 14 days of post-fermentation maceration on the skins. Pressed to French oak barrels (10% new) for 12 months of maturation. Components are assembled and settled for a further 2 months before being bottled, un-fined with only a light filtration.

Tasting Notes:
A true reflection of Elgin Pinot Noir, produced in a fresh style with vibrant fruit notes and an earthy core backed up by a delicate and restrained oak character. Sour cherries, wild berries, baking spices and a fine savoury tension supported by silky tannins and a refreshing acidity produce a refined and elegant Pinot Noir. Will gain complexity with careful cellaring over the next 10 years.
